These Hawaiian Cinnamon Rolls take the classic cinnamon roll to the next level with a tropical twist. Infused with pineapple juice, coconut, and a hint of vanilla, these soft and gooey rolls are perfect for breakfast, brunch, or a sweet indulgence any time of day.   • Dough:
    • 4 cups all-purpose or bread flour
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1/2 cup warm pineapple juice (110°F/43°C)
    • 1/4 cup granulated sugar
    • 1/2 cup melted butter
    • 1/2 cup warm milk
    • 1 tsp salt
    • 1 tsp vanilla extract
    • 1 egg
  • Filling:
    • 1/2 cup softened butter
    • 3/4 cup brown sugar
    • 2 tbsp ground cinnamon
    • 1/2 cup shredded coconut
  • Frosting:
    • 4 oz cream cheese, softened
    • 1/4 cup butter, softened
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • 2 tbsp pineapple juice

Instructions

  1. Make the Dough: In a bowl, combine warm pineapple juice, yeast, and 1 tablespoon sugar. Let sit until foamy (about 5-10 minutes). Add flour, melted butter, warm milk, salt, vanilla extract, egg, and remaining sugar. Knead until smooth. Cover and let rise for 1 hour, or until doubled in size.
  2. Prepare the Filling: Mix brown sugar, cinnamon, and softened butter. Stir in shredded coconut.
  3. Roll and Fill: Roll out dough into a rectangle (about 1/4 inch thick). Spread filling evenly over the dough. Roll tightly into a log and slice into 12 rolls.
  4. Second Rise & Bake: Place rolls in a greased baking dish and let rise for another 30 minutes. Bake at 350°F (175°C) for 20-25 minutes, or until golden brown.
  5. Make the Frosting: Beat cream cheese, butter, powdered sugar, vanilla, and pineapple juice until smooth.
  6. Frost and Serve: Spread frosting over warm rolls and sprinkle with additional coconut if desired. Enjoy!

  • Use warm pineapple juice (not hot) to properly activate the yeast.
  • Let the dough rise fully to ensure soft and fluffy rolls.
