1 lb Ground Beef
3 Potatoes, peeled and diced
1 Onion, finely diced
1 tbsp minced Garlic
3 cup Beef Broth
24 oz Italian/Spaghetti Sauce
14.5 oz Diced Tomatoes
2 tsp Worcestershire Sauce
1 teaspoon Italian seasoning
1 Bay Leaf
1/4 tsp Crushed Red Pepper Flake
Salt and Pepper to taste
24 oz Frozen Mixed Vegetables, thawed
Instructions
Brown the Ground Beef: In a large pot, cook the ground beef until no longer pink. Drain excess fat.
Add Ingredients: Add potatoes, onion, garlic, beef broth, spaghetti sauce, diced tomatoes, Worcestershire sauce, Italian seasoning, bay leaf, red pepper flakes, salt, and pepper. Stir to combine.
Simmer: Bring the soup to a boil, then reduce heat and simmer for about 20 minutes or until potatoes are tender.
Add Vegetables: Stir in the thawed mixed vegetables and cook for an additional 5-10 minutes.
Serve: Remove the bay leaf and adjust seasoning if needed. Serve hot and enjoy!
