Ingredients

Units Scale
  • 1 lb ground beef (or turkey, if you prefer)
  • 2 cups white rice (uncooked)
  • 1 can cream of mushroom soup (or cream of chicken)
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 1/2 cups shredded cheese (cheddar or blend of your choice)
  • Salt and pepper to taste
  • Optional: splash of Worcestershire sauce or soy sauce
  • Optional: crispy fried onions for topping
  • Optional: peas, corn, or bell peppers for added veggies

Instructions

  1. Cook the Ground Beef:
Brown the ground beef in a skillet over medium heat. Drain excess grease, add chopped onions, and cook until softened (3-4 minutes). Season with garlic powder, salt, and pepper to taste.

  2. Prepare the Rice:
Cook the white rice according to package directions until fluffy (about 2 cups cooked rice).

  3. Assemble the Casserole:
In a large bowl, combine cooked ground beef, rice, and cream of mushroom soup. If you want extra creaminess, stir in a little milk or broth. Transfer the mixture into a greased casserole dish.

  4. Add Cheese:
Top the casserole with a generous amount of shredded cheese.

  5. Bake:
Cover the casserole with foil and bake at 350°F (175°C) for 20-25 minutes. Remove foil and bake for an additional 10-15 minutes, until cheese is melted and golden brown on top.

Notes

  • For added flavor, you can splash Worcestershire or soy sauce in the beef mixture.
  • To add crunch, top the casserole with crispy fried onions in the last 5 minutes of baking.
  • Sneak in veggies like peas, carrots, or bell peppers for extra nutrition.
