  • 1 lb elbow macaroni or small pasta shells
  • 1 cup carrots, shredded or finely chopped
  • 1 cup celery, finely chopped

  • ½ cup sweet pickle relish
  • ¼ cup chopped parsley (optional, for garnish)

For the Dressing

  • 1 cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp granulated sugar
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook Pasta: Boil the macaroni according to package instructions. Drain and rinse under cold water.
  2. Prepare Vegetables: In a large bowl, combine carrots, celery, bell pepper, red onion, and pickle relish.
  3. Make Dressing: In a separate bowl, whisk together mayonnaise, sour cream, mustard, vinegar, sugar, paprika, garlic powder, onion powder, salt, and pepper.
  4. Combine: Mix the cooked pasta with the vegetables. Pour the dressing over and toss to coat evenly.
  5. Chill: Cover and refrigerate for at least 1 hour before serving. Garnish with parsley if desired.
