Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1 tbsp olive oil
  • 1/4 cup chicken broth or water (optional, to help soften sweet potatoes)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp red pepper flakes (optional, for spice)
  • Juice of 1/2 lime (optional, for brightness)

Instructions

  1. Sauté the Onion and Garlic
Heat a large skillet over medium heat and add the olive oil. Add the diced onion and minced garlic, cooking until fragrant and slightly softened, about 2-3 minutes.

  2. Brown the Turkey
Add the ground turkey to the skillet, breaking it up with a spatula as it cooks. Season with salt, pepper, paprika, cumin, and red pepper flakes (if using). Cook until no longer pink, about 5-7 minutes.

  3. Cook the Sweet Potatoes
Stir in the diced sweet potatoes and pour in the chicken broth or water to help them soften. Cover the skillet and let them cook for about 10 minutes, stirring occasionally, until they are fork-tender.

  4. Add the Veggies
Toss in the diced bell pepper and cook for another 2-3 minutes. Then, stir in the fresh spinach and let it wilt into the mixture.

  5. Serve and Enjoy
Once everything is cooked through, give it a taste and adjust the seasoning if needed. Drizzle with lime juice before serving for an extra fresh flavor boost.

Notes

  • Cut the sweet potatoes into small cubes for faster cooking.
  • A cast-iron skillet will help achieve a nice sear and even cooking.
  • Add a pinch of cinnamon for a slightly sweet and warm flavor twist.
