Ingredients

Scale
  • Main Ingredients:

    • 4 boneless skinless chicken breasts, pounded to even thickness – approximately 1-inch thickness (approximately to 2 pounds)
    • ½ cup olive oil
    • ⅓ cup fresh squeezed lemon juice
    • 1 tablespoon minced garlic
    • 2 teaspoons honey
    • 1 teaspoon salt
    • 1 teaspoon dried parsley flakes
    • ½ teaspoon dried oregano
    • ½ teaspoon dried thyme
    • ¼ teaspoon black pepper
  • Optional Garnish:

    • 1 tablespoon fresh chopped parsley
    • small lemon wedges, to squeeze onto the grilled chicken before serving

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, honey, salt, parsley, oregano, thyme, and black pepper.
  2. Marinate the chicken: Place the chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  3. Grill the chicken: Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked and juices run clear.
  4. Serve: Garnish with fresh parsley and lemon wedges before serving.

Notes

  • For extra flavor, marinate the chicken overnight for maximum taste.
  • This marinade works well with other proteins like pork or tofu.
