Grandma Pat’s Bacon Rolls are soft, fluffy rolls filled with crispy bacon and a touch of brown sugar. The perfect mix of savory and comforting, these rolls are sure to be a hit for breakfast, a snack, or as a dinner side.

Ingredients

Scale
  • For the dough:
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup butter (softened)
  • 1 cup milk (warm)
  • 2 large eggs
  • 1 packet active dry yeast
  • 1/2 teaspoon salt
  • For the bacon filling:
  • 8 slices bacon (crispy cooked and crumbled)
  • 1/4 cup brown sugar
  • 2 tablespoons butter (melted)

Instructions

  1. Prepare the dough: In a small bowl, activate the yeast in warm milk with a pinch of sugar. Let sit for 5–10 minutes until frothy. In a large bowl, combine flour, sugar, and salt. Add the yeast mixture, eggs, and softened butter, mixing until it forms a dough. Knead for a few minutes until smooth, then cover and let rise in a warm place for about an hour, or until it doubles in size.
  2. Cook the bacon: While the dough rises, cook the bacon until crispy. Let it cool, then crumble into small pieces, saving some bacon drippings.
  3. Roll and fill the dough: Punch down the dough and roll it out on a floured surface into a large rectangle. Brush with melted butter, then sprinkle the crumbled bacon and brown sugar. Roll it up tightly into a log, then slice into individual rolls. Place on a greased baking sheet and let rise for 30 minutes.
  4. Bake the rolls: Preheat the oven to 350°F (175°C). Bake the rolls for 20–25 minutes, or until golden brown. The rolls are ready when they are soft and your kitchen smells amazing.
  5. Serve: Allow the rolls to cool slightly before serving. Enjoy warm!

Notes

  • For extra flavor, brush bacon drippings on the dough before rolling.
  • A sprinkle of cinnamon sugar can add a touch of sweetness.
