Main Filling:
2 tablespoons olive oil or butter
1 cup diced yellow onion
1 pound ground beef
1 tablespoon minced garlic
1 tablespoon worcestershire sauce
1 tablespoon tomato paste
2 teaspoons dried parsley
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons gluten free all purpose flour
¾ cup low sodium beef broth
½ cup frozen corn
1 cup frozen peas and carrots
Topping:
4 cups mashed potatoes
Instructions
Preheat the oven: Preheat the oven to 400°F.
Cook the filling: In a skillet, heat olive oil and sauté onions until translucent. Add ground beef, garlic, worcestershire sauce, tomato paste, herbs, salt, and pepper. Cook until beef is browned.
Thicken the filling: Sprinkle flour over the beef mixture and stir. Pour in beef broth and cook until thickened.
Add vegetables: Stir in corn, peas, and carrots. Cook until veggies are heated through.
Assemble the pie: Transfer the filling to a baking dish and top with mashed potatoes.
Bake: Bake in the preheated oven for about 20 minutes or until the top is golden brown.
Serve: Let it cool slightly before serving.
Notes
You can add cheese on top of the mashed potatoes for extra flavor.
