Dry

  • 2 cups gluten free all purpose flour
  • 1 ½ cups blanched almond flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¾ teaspoons cinnamon
  • ¼ teaspoon cloves
  • ¼ tsp nutmeg

Glaze

  • 2 cups powdered sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons non-dairy milk
  • 1 teaspoon vanilla
  • Pinch of cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C) and grease a 9×13-inch baking pan.
  2. Mix wet ingredients: In a large bowl, whisk together eggs, sugars, apple sauce, oil, and vanilla. Stir in grated apple.
  3. Combine dry ingredients: In a separate bowl, mix gluten-free flour, almond flour, baking powder, baking soda, salt, and spices.
  4. Combine wet and dry: Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Bake: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Make the glaze: Whisk together powdered sugar, maple syrup, milk, vanilla, and cinnamon. Drizzle over the cooled cake before serving.
