Chicken:
1 pound chicken breast
3 tablespoons gluten free all purpose flour
1 teaspoon paprika
1 ½ teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons salt
¼ teaspoon black pepper
Egg wash:
2 eggs
2 tablespoons non-dairy milk
Breading:
1 ½ cups gluten free panko breadcrumbs
1 teaspoon Old bay seasoning
½ teaspoon parsley
Instructions
Prepare the chicken: Cut the chicken breast into bite-sized pieces.
Season the chicken: In a bowl, mix the flour, paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken pieces in this mixture.
Make the egg wash: Whisk together the eggs and non-dairy milk in a shallow bowl.
Coat the chicken: Dip the seasoned chicken pieces in the egg wash, then coat them in the panko breadcrumb mixture.
Air fry: Preheat the air fryer to 400°F (200°C). Place the breaded chicken nuggets in a single layer in the air fryer basket. Cook for about 10-12 minutes, flipping halfway through, until golden and crispy.
Notes
For extra crunch, spray the breaded nuggets with cooking spray before air frying.
Adjust the seasoning to your preference by adding more or less of the spices.
