Dough:
2¼ teaspoons active dry yeast
¾ cup warm water
¼ cup sugar
½ cup buttermilk
1 egg
3½ cups flour
2 tablespoons melted butter

1 cup powdered sugar
2–3 tablespoons milk
1 teaspoon vanilla
Instructions
Prepare the dough: In a bowl, mix yeast with warm water and sugar. Let it sit for 5 minutes. Add buttermilk, egg, flour, and melted butter. Mix until a dough forms.
Rise and shape: Cover the dough and let it rise for 1 hour. Roll out the dough and cut into squares.
Fry and glaze: Heat oil in a pot. Fry the beignets until golden brown. Mix powdered sugar, milk, and vanilla to make the glaze. Dip the beignets in the glaze.
Serve: Enjoy the glazed buttermilk beignets warm.
