  • 1.5 lbs ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Mix Ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, minced garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix until just combined to avoid overmixing.
  3. Shape Meatloaves: Divide the mixture into individual portions and shape them into small loaves. Place them on the prepared baking sheet.
  4. Bake: Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaves are firm.
  5. Add Topping: Remove from the oven and sprinkle extra shredded mozzarella on top of each meatloaf. Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
  6. Serve: Let the meatloaves rest for 5 minutes before serving. Garnish with fresh parsley and serve warm with your favorite side dishes.
