3 tablespoons butter
¾ cup finely diced yellow onions
3 cloves fresh garlic, minced
2 cups chicken broth
1 chicken bouillon cube
1 cup uncooked long grain white rice
2 cups broccoli, fresh or frozen
2 ¼ cups cheddar cheese, shredded
¼ cup Parmesan cheese, grated
1 teaspoon Dijon mustard
¾ teaspoon EACH: Dried oregano, basil, parsley
Breading:
½ cup all-purpose flour
¾ cup Italian breadcrumbs
2 large eggs, beaten
Vegetable or canola oil, for frying (approximately 40 oz.)
Instructions
Cook Rice Mixture: In a large skillet, melt butter and sauté onions and garlic. Add chicken broth, bouillon cube, rice, broccoli, and seasonings. Cook until rice is tender.
Add Cheese: Stir in cheddar, Parmesan, and Dijon mustard until melted and combined.
Shape Balls: Allow mixture to cool, then form into balls.
Bread and Fry: Coat balls in flour, eggs, and breadcrumbs. Fry until golden brown.
Notes
You can customize the filling by adding other vegetables or proteins.
For a healthier version, you can bake the rice balls instead of frying them.
