  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced lengthwise
  • salt and ground black pepper to taste
  • 1 tablespoon sherry vinegar

For the white sauce:

  • 2 tablespoons butter
  • 2 ½ tablespoons all-purpose flour
  • 2 ½ cups milk
  • 1 pinch ground nutmeg
  • 1 pinch cayenne pepper to taste
  • ¼ teaspoon ground thyme

For the topping:

  • 2 tablespoons melted butter
  • ⅔ cup panko bread crumbs
  • 2 pounds fresh green beans, trimmed
  • 4 ounces shredded Gruyere cheese, divided
  • ⅓ cup grated Parmesan cheese

Instructions

  1. Caramelize the onions: In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions, season with salt and pepper, and cook until caramelized. Stir in sherry vinegar and set aside.
  2. Make the white sauce: In a saucepan, melt 2 tablespoons of butter, whisk in flour, then gradually whisk in milk. Season with nutmeg, cayenne, and thyme. Cook until thickened.
  3. Assemble the casserole: Mix green beans with white sauce, half of the Gruyere, and half of the Parmesan. Transfer to a baking dish, top with caramelized onions, remaining cheeses, and breadcrumb mixture.
  4. Bake: Bake at 375°F for about 25-30 minutes until bubbly and golden on top.

Notes

  • You can prepare the caramelized onions and white sauce ahead of time for quicker assembly.
  • Feel free to add crispy bacon or mushrooms for extra flavor.
