3 tbsp unsalted butter, divided
1 tbsp cooking oil
1 medium yellow onion, sliced
1/4 cup water
3 large eggs
2 tbsp chives, thinly sliced
2 tbsp mayonnaise
1 tbsp Sriracha
1 brioche bun, sliced
1 slice cheddar cheese
Salt and pepper to taste
Instructions
Caramelize Onions: In a skillet, melt 1 tbsp butter and oil. Add onions and cook until caramelized. Add water and cook until evaporated.
Prepare Eggs: In a bowl, whisk eggs, chives, salt, and pepper. Cook eggs in remaining butter.
Assemble Sandwich: Mix mayo and Sriracha. Toast bun, melt cheese, layer eggs, onions, and sauce. Enjoy!
