This Fairfax Breakfast Sandwich is a delicious copycat of the popular Eggslut version. With a fluffy brioche bun, cheesy eggs, and a spicy mayo sauce, this sandwich is perfect for a satisfying breakfast or brunch.

Main Ingredients:

  • 3 tbsp unsalted butter, divided
  • 1 tbsp cooking oil
  • 1 medium yellow onion, sliced
  • 1/4 cup water
  • 3 large eggs
  • 2 tbsp chives, thinly sliced
  • 2 tbsp mayonnaise
  • 1 tbsp Sriracha
  • 1 brioche bun, sliced
  • 1 slice cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Caramelize Onions: In a skillet, melt 1 tbsp butter and oil. Add onions and cook until caramelized. Add water and cook until evaporated.
  2. Prepare Eggs: In a bowl, whisk eggs, chives, salt, and pepper. Cook eggs in remaining butter.
  3. Assemble Sandwich: Mix mayo and Sriracha. Toast bun, melt cheese, layer eggs, onions, and sauce. Enjoy!

Notes

  • You can customize the sandwich by adding bacon, avocado, or other favorite toppings.
