4 English muffins, split
8 large eggs
1cup shredded cheese (cheddar, mozzarella, or your preferred blend)
8 slices cooked bacon or sausage links, chopped
1/2cup diced bell peppers or onions (optional)
1cup marinara sauce or softened butter
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
Fresh herbs (such as basil or parsley) or hot sauce, for garnish
Instructions
Preheat Oven: Set your oven to 375°F (190°C).
Toast English Muffins: Place split English muffins on a baking sheet. Lightly brush with olive oil and toast in the oven for 5 minutes until golden.
Prepare Toppings: In a skillet over medium heat, sauté diced bell peppers or onions (if using) until softened. Set aside.
Assemble Pizzas: Spread a tablespoon of marinara sauce or butter on each toasted muffin half. Top with sautéed vegetables, chopped bacon or sausage, and a sprinkle of shredded cheese.
Add Eggs: For whole eggs, create a slight indentation in the toppings and crack an egg into each muffin half. For scrambled eggs, pre-cook them and distribute evenly over the toppings.
Bake: Return the baking sheet to the oven and bake for 12-15 minutes, or until eggs are set and cheese is melted and bubbly.
Serve: Garnish with fresh herbs or a dash of hot sauce, if desired. Serve immediately.
Notes
Pre-toasting the muffins prevents them from becoming soggy.
