  • 1 lb Italian sausage (mild or spicy)
  • 4 medium potatoes, sliced thin
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste

Instructions

  1. Cook the Sausage: In a large pot, brown the Italian sausage over medium heat. Break it up into smaller pieces as it cooks. Once browned, drain excess fat and set aside.

  2. Sauté the Vegetables: In the same pot, sauté the onion and garlic for about 2 minutes until fragrant.

  3. Add the Potatoes and Broth: Add the sliced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Let potatoes cook for 10-12 minutes or until fork-tender.

  4. Add the Sausage and Kale: Stir in the cooked sausage and kale. Cook for 5 minutes until kale wilts and flavors blend.

  5. Make it Creamy: Stir in the heavy cream and season with red pepper flakes, salt, and pepper to taste. Let everything simmer for a few more minutes.

  6. Serve and Enjoy: Ladle soup into bowls and serve hot.
