Ingredients

Units Scale
  • 1 pre-made pie crust (or homemade)
  • 4 large eggs
  • 1/2 cup milk or heavy cream
  • 1/2 cup shredded cheese (cheddar, Swiss, or feta)
  • 1/2 cup cooked bacon, ham, or veggies (like spinach and mushrooms)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • A pinch of nutmeg

Instructions

Step 1: Prep the Crust

  • Preheat oven to 375°F (190°C).
  • Roll out the pie crust and cut small circles using a biscuit cutter or glass.
  • Press each circle into a greased mini muffin tin.

Step 2: Whisk the Filling

  • In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg.

Step 3: Add Fillings

  • Sprinkle cheese, cooked bacon, ham, or veggies into each crust-lined muffin cup.
  • Pour the egg mixture over the top, filling each about ¾ full.

Step 4: Bake Until Golden

  • Bake for 18-20 minutes, or until the quiches are set and lightly golden.
  • Let them cool slightly before removing from the pan.

Notes

  • Don’t overfill the muffin cups; the egg mixture will puff up as it bakes.
  • Pre-baking the crust for 5 minutes helps prevent sogginess.
  • Use a silicone muffin pan for easier removal.
  • For a crustless version, grease the muffin tin and pour the filling directly inside.
