This Easy Meatloaf recipe is perfect for busy weeknights or when you’re craving a comforting meal. Tender and flavorful with a sweet and tangy glaze, it’s a crowd-pleasing dish that’s simple to make and even better as leftovers.

Ingredients

Scale
  • 1 lb ground beef (85% lean)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup, divided
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp brown sugar or honey (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, egg, Worcestershire sauce, salt, pepper, and 2 tablespoons of ketchup. Mix until combined.
  3. Transfer the meat mixture to a greased loaf pan, pressing it down gently to form an even shape.
  4. In a small bowl, mix together the remaining ketchup and brown sugar or honey to make the glaze. Spread it over the top of the meatloaf.
  5. Bake for 1 hour, or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf rest for 10 minutes before slicing.
  7. Serve with mashed potatoes, green beans, or your favorite side dish, and spoon extra glaze over the slices.

Notes

  • Use 85% lean ground beef for the best texture and flavor.
  • Don’t skip the resting time after baking to keep the meatloaf moist.
  • You can add cheese to the mixture for a cheesy twist.
  • Add vegetables like bell peppers or carrots for extra flavor.
