This Easy Greek Baked Cod is a light, flaky, and flavorful dish infused with Mediterranean ingredients like olive oil, lemon, garlic, and oregano.   • 4 fresh cod fillets
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 cup cherry tomatoes, halved (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

 

  1. Preheat the Oven: Set your oven to 400°F (200°C).
  2. Prepare the Marinade: In a small bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  3. Coat the Cod: Place the cod fillets in a baking dish and brush generously with the marinade.
  4. Add Extra Flavor: Scatter cherry tomatoes around the fish and crumble feta cheese on top if using.
  5. Bake to Perfection: Bake for 12-15 minutes, or until the fish flakes easily with a fork.
  6. Garnish and Serve: Sprinkle with fresh parsley and serve with lemon wedges.

Notes

  • Use fresh cod for the best results, but properly thawed frozen cod works too.
  • Check for doneness at 12 minutes to prevent overcooking.
