2cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp sugar
2 tbsp fresh rosemary, chopped
2 cloves garlic, minced
1/2cup olive oil
1cup whole milk
1 egg
1/4cup grated Parmesan cheese (optional, for topping)
Extra olive oil for brushing
Instructions
Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
In a large bowl, combine the flour, baking powder, salt, and sugar. Stir in the chopped rosemary and minced garlic.
In a separate bowl, whisk together the olive oil, milk, and egg.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Spoon the batter into the muffin tin, filling each cup about 3/4 full.
Drizzle a little olive oil over the top of each muffin for added flavor and moisture.
Optionally, sprinkle some grated Parmesan cheese on top for a cheesy finish.
Bake for 18–20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Allow to cool slightly before serving. Enjoy!
Notes
For an extra flavor boost, you can add a pinch of garlic powder or onion powder to the batter.
These muffins are best enjoyed warm, but they can be stored in an airtight container for up to 2 days.
If you prefer a dairy-free version, substitute the milk with a non-dairy alternative like almond milk, and use a dairy-free cheese for topping.
