Chicken:
500 gram or 1.1 lbs skinless chicken breast cut into bite size cubes
2 tablespoon peanut oil
Salt as required
Vegetables:
2 medium size onion cut into 1 inch cubes
1 large size green bell pepper cut into 1 inch cubes
½ teaspoon minced garlic
½ teaspoon minced ginger
1 fresh red/green chili chopped
Sauce:
¾ teaspoon black pepper freshly ground
3 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon rice vinegar
½ teaspoon brown sugar
1 teaspoon toasted sesame oil
1 teaspoon cornstarch
2 tablespoon water/chicken broth
Instructions
Marinate the chicken: In a bowl, mix chicken cubes with salt, cornstarch, and black pepper. Set aside for 15-20 minutes.
Prepare the sauce: In a separate bowl, combine black pepper, light soy sauce, dark soy sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water/chicken broth.
Cook the chicken: Heat oil in a pan, add marinated chicken and cook until golden brown. Remove from pan.
Stir-fry vegetables: In the same pan, sauté onions, bell peppers, garlic, ginger, and chili until slightly tender.
Combine everything: Add cooked chicken back to the pan, pour the sauce over, and stir well. Cook until the sauce thickens.
Serve: Garnish with green onions and serve hot with rice or noodles.

You can adjust the level of black pepper according to your taste preference.
