Ingredients

Units Scale

For the Sugar Cookie Base:

  • 1 package (16.5 ounces) refrigerated sugar cookie dough, softened

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 6 tablespoons unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

For the Fruit Topping:

  • 1 cup sliced strawberries
  • 1 cup sliced kiwis
  • 1 cup blueberries
  • 1 cup mandarin orange segments
  • 1 cup blackberries

For the Glaze (optional):

  • 2 tablespoons honey

Instructions

  1. Prepare the Sugar Cookie Base:

    • Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
    • Place the softened sugar cookie dough on the prepared baking sheet. Using your hands or a rolling pin, shape the dough into an egg shape, approximately 1/4 inch thick.
    • Bake for 12–15 minutes, or until the edges are lightly golden. Remove from the oven and let it cool completely.
  2. Prepare the Cream Cheese Frosting:

    • In a medium bowl, beat together the softened cream cheese and butter until smooth.
    • Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.
  3. Assemble the Fruit Pizza:

    • Once the cookie base has cooled, spread the cream cheese frosting evenly over the top.
    • Arrange the fresh fruit on top of the frosting in a decorative pattern, such as concentric circles or a random assortment.
  4. Add the Glaze (Optional):

    • In a small bowl, warm the honey in the microwave for about 10 seconds to make it more fluid.
    • Brush the warmed honey over the fruit to give it a glossy finish and a subtle sweetness.
  5. Serve:

    • Slice into wedges and serve immediately.

Notes

  • Fruit Variations: Feel free to use any fresh fruits you prefer or have on hand, such as raspberries, blackberries, or mango slices.
  • Make-Ahead: The sugar cookie base and cream cheese frosting can be prepared a day in advance. Assemble the fruit topping and glaze just before serving to maintain freshness.
  • Dietary Adjustments: For a gluten-free version, use a gluten-free sugar cookie dough.
