This Cuban Roasted Mojo Pork recipe combines the flavors of citrus, herbs, and spices to create a tender and flavorful dish that is perfect for a special occasion or weekend meal.

Marinade:

    • 3/4 cup extra-virgin olive oil
    • 1 tablespoon orange zest
    • 3/4 cup fresh orange juice
    • 1/2 cup fresh lime juice
    • 1 cup cilantro, finely chopped
    • 1/4 cup lightly packed mint leaves, finely chopped
    • 8 garlic cloves, minced
    • 1 tablespoon minced oregano, 2 teaspoons dried oregano
    • 2 teaspoons ground cumin
    • Kosher salt and pepper

Main Ingredient:

  • 3 & 1/2 pounds boneless pork shoulder, in one piece*

Instructions

  1. Prepare the marinade: In a bowl, mix together olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper.
  2. Marinate the pork: Place the pork shoulder in a large resealable plastic bag, pour the marinade over the pork, seal the bag, and refrigerate for at least 4 hours or overnight.
  3. Roast the pork: Preheat the oven to 325°F. Remove the pork from the marinade and place it in a roasting pan. Roast for about 3 hours, or until the pork is tender and the internal temperature reaches 145°F.
  4. Rest and serve: Let the pork rest for 10-15 minutes before slicing. Serve hot with your favorite sides.

Notes

  • This recipe works well with a pork shoulder, but you can also use pork loin or tenderloin.
  • For added flavor, you can grill the pork instead of roasting it in the oven.
