Marinade:
3/4 cup extra-virgin olive oil
1 tablespoon orange zest
3/4 cup fresh orange juice
1/2 cup fresh lime juice
1 cup cilantro, finely chopped
1/4 cup lightly packed mint leaves, finely chopped
3 & 1/2 pounds boneless pork shoulder, in one piece*
Instructions
Prepare the marinade: In a bowl, mix together olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper.
Marinate the pork: Place the pork shoulder in a large resealable plastic bag, pour the marinade over the pork, seal the bag, and refrigerate for at least 4 hours or overnight.
Roast the pork: Preheat the oven to 325°F. Remove the pork from the marinade and place it in a roasting pan. Roast for about 3 hours, or until the pork is tender and the internal temperature reaches 145°F.
Rest and serve: Let the pork rest for 10-15 minutes before slicing. Serve hot with your favorite sides.
Notes
This recipe works well with a pork shoulder, but you can also use pork loin or tenderloin.
For added flavor, you can grill the pork instead of roasting it in the oven.
