Ingredients

Scale

Main Filling:

    • 2 pounds sour cabbage leaves
    • 2 pounds ground pork
    • ½ cup rice (long grain, uncooked, such as basmati or jasmine)
    • 1 large onion (chopped or grated)
    • ¼ cup fresh dill (chopped)
    • 2 tablespoons fresh parsley (chopped)
    • Salt and pepper (to taste)

Additional:

  • 8 ounces bacon (or other smoked meats such as smoked sausage or hock)
  • 4 cups tomato juice

Instructions

  1. Prepare the Cabbage: Carefully remove the sour cabbage leaves and blanch them in boiling water for a few minutes. Drain and set aside.
  2. Prepare the Filling: In a bowl, mix ground pork, rice, onion, herbs, salt, and pepper.
  3. Assemble the Rolls: Place a spoonful of the filling on each cabbage leaf and roll it up, tucking in the sides.
  4. Cook in Crockpot: Layer the rolls in the crockpot, add the bacon on top, pour tomato juice over them, and cook on low for several hours until the cabbage is tender.
  5. Serve: Enjoy these delicious cabbage rolls hot with a side of sour cream or crusty bread.

Notes

  • You can customize the filling by adding other ingredients like garlic, paprika, or mushrooms.
  • If the rolls are too big for the crockpot, you can cut them in half before cooking.
