It’s a one-pan meal that comes together in about 30 minutes, perfect for busy weeknights!

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ cup chicken broth
  • 1 (5.2 oz) package Boursin Garlic & Herb cheese
  • ½ cup heavy cream
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Sear the Chicken
    • Heat a large skillet over medium-high heat and add olive oil and butter.
    • Season the chicken breasts with salt, pepper, and paprika.
    • Sear for 4-5 minutes per side until golden brown. Remove from the pan and set aside.
  2. Make the Sauce

    • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
    • Pour in the chicken broth and scrape up any browned bits from the pan. Simmer for 1-2 minutes.
  3. Melt the Boursin Cheese

    • Add the Boursin cheese to the pan, breaking it up with a spoon.
    • Pour in the heavy cream and whisk until the sauce is smooth and creamy.
  4. Simmer with Chicken

    • Return the chicken to the pan, nestling it into the sauce.
    • Reduce heat to low, cover, and cook for another 5-7 minutes until the chicken is fully cooked (internal temp 165°F).
  5. Serve & Enjoy

    • Spoon the creamy sauce over the chicken and garnish with fresh parsley.
    • Serve immediately with mashed potatoes, pasta, or crusty bread to soak up the sauce!

Notes

  • If the sauce is too thick, add an extra splash of chicken broth to loosen it.
  • For a richer flavor, substitute chicken thighs instead of breasts.
  • Make it lighter by using half-and-half instead of heavy cream.
