  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the Veggies: Heat olive oil in a large Dutch oven over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened. Stir in garlic and cook for another 30 seconds.
  2. Simmer the Broth: Pour in the chicken broth, add thyme and bay leaf. If using, place rotisserie chicken bones into the pot for extra flavor. Bring to a gentle simmer.
  3. Add the Chicken and Noodles: Shred the rotisserie chicken and stir it into the soup. Add egg noodles and cook until tender, about 6-8 minutes.
  4. Finish with Seasoning: Remove the bay leaf. Stir in lemon juice, salt, and pepper to taste.
  5. Serve: Ladle into bowls, garnish with fresh parsley, and enjoy with crusty bread or crackers.
