These Cinnamon Roll French Toast Roll-Ups are the perfect combination of two breakfast favorites! Soft bread is filled with a buttery cinnamon-sugar mixture, rolled up, and dipped in a creamy egg batter before being pan-fried to golden perfection. Finish them off with a drizzle of icing, and you’ve got a breakfast treat that’s fun, delicious, and easy to make!

Ingredients

Units Scale
  • 8 slices of soft white bread, crusts removed
  • 3 tablespoons unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter (for cooking)
  • Powdered sugar, for garnish
  • Maple syrup or icing, for serving

Instructions

  1. Prepare the Cinnamon Filling: In a small bowl, mix the softened butter, granulated sugar, and cinnamon until well combined.
  2. Flatten the Bread: Using a rolling pin, flatten each slice of bread to make it more pliable.
  3. Spread and Roll: Spread a thin layer of the cinnamon mixture onto each slice of bread. Tightly roll up each slice and set aside.
  4. Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and vanilla extract.
  5. Dip and Cook: Heat a large pan over medium heat and melt 1 tablespoon of butter. Dip each roll-up into the egg mixture, making sure it’s fully coated, then place it in the pan.
  6. Pan-Fry: Cook for about 2-3 minutes per side, turning until golden brown and slightly crispy.
  7. Serve: Dust with powdered sugar and drizzle with maple syrup or icing for a sweet finish. Enjoy warm!

Notes

  • Try using brioche or challah for an even richer taste.
  • For a fun twist, add a little cream cheese to the filling for a tangy contrast.
  • These are best eaten fresh, but you can store leftovers in the fridge and reheat in a pan for a few minutes.
  • Make them even more indulgent with a cream cheese glaze instead of syrup!
