Cheesecake:
24 oz cream cheese (full-fat)
1 cup granulated sugar
1 cup heavy whipping cream
8 oz dark chocolate (60-70% cocoa)
Zest and juice of 2 large fresh oranges
Crust:
2 cups graham cracker crumbs
½ cup unsalted butter
Instructions
Prepare the crust: Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Chill in the refrigerator.
Make the cheesecake filling: Melt dark chocolate and let it cool. In a bowl, beat cream cheese, sugar, orange zest, and juice until smooth. Whip the cream until stiff peaks form, then fold it into the cream cheese mixture. Pour half of the mixture over the crust.
Finish the cheesecake: Mix the melted chocolate into the remaining cream cheese mixture. Pour over the first layer. Refrigerate for at least 4 hours or overnight.
Notes
You can garnish the cheesecake with additional orange zest, chocolate shavings, or whipped cream.
