FOR THE CHILE VERDE PORK:

  • 1 boneless pork loin (about 3 ½ to 4 pounds)
  • 2 teaspoons kosher salt
  • 1 tablespoon canola oil
  • ½ cup chicken stock or water or light beer
  • 4 carrots, sliced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ground chile powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 16 ounces salsa verde
  • 1 10-ounce can green enchilada sauce
  • 1 4-ounce can chopped green chiles

Instructions

  1. Prep the Pork: Season pork loin with salt. Heat oil in a large skillet and brown the pork on all sides.
  2. Cook the Vegetables: Add carrots, onion, garlic, chile powder, cumin, and oregano to the skillet. Cook until vegetables soften.
  3. Add Sauces: Stir in salsa verde, enchilada sauce, and green chiles. Place the pork back in the skillet.
  4. Simmer: Cover and simmer until pork is cooked through and tender.
  5. Shred and Serve: Remove pork, shred it, and return to the sauce. Serve with tortillas and desired toppings.
