FOR THE CHILE VERDE PORK:
1 boneless pork loin (about 3 ½ to 4 pounds)
2 teaspoons kosher salt
1 tablespoon canola oil
½ cup chicken stock or water or light beer
4 carrots, sliced
1 yellow onion, diced
3 cloves garlic, minced
1 tablespoon ground chile powder
1 tablespoon ground cumin
1 teaspoon dried oregano
16 ounces salsa verde
1 10-ounce can green enchilada sauce
1 4-ounce can chopped green chiles
Instructions
Prep the Pork: Season pork loin with salt. Heat oil in a large skillet and brown the pork on all sides.
Cook the Vegetables: Add carrots, onion, garlic, chile powder, cumin, and oregano to the skillet. Cook until vegetables soften.
Add Sauces: Stir in salsa verde, enchilada sauce, and green chiles. Place the pork back in the skillet.
Simmer: Cover and simmer until pork is cooked through and tender.
Shred and Serve: Remove pork, shred it, and return to the sauce. Serve with tortillas and desired toppings.
Notes
You can customize the level of spiciness by adjusting the amount of chile powder and green chiles.
