Ingredients

Scale

Garlic Herb Butter:

    • 2 cloves garlic, minced
    • 1 pinch salt
    • 2 tablespoons chopped fresh flat-leaf parsley
    • 6 tablespoons unsalted butter

Chicken Kiev:

  • 4 (8 ounce) skinless, boneless chicken breast halves, pounded to ¼-inch thickness
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 2 large eggs, beaten
  • 2 cups panko bread crumbs
  • 1 pinch cayenne pepper
  • 2 cups vegetable oil for frying, or as needed

Instructions

  1. Prepare Garlic Herb Butter: In a small bowl, mix garlic, salt, parsley, and butter until well combined. Shape into a log, wrap in plastic wrap, and freeze until firm.
  2. Stuff Chicken Breast: Place a frozen butter log in the center of each chicken breast. Fold in sides and roll up tightly. Season with salt and pepper.
  3. Coat Chicken: Dredge chicken in flour, dip in beaten eggs, and coat with panko bread crumbs mixed with cayenne pepper.
  4. Fry Chicken Kiev: Heat oil in a skillet and fry chicken until golden brown and cooked through.
  5. Serve: Let rest briefly before slicing and serving hot.

Notes

  • Make sure the butter log is frozen solid before stuffing the chicken to prevent leaking during cooking.
  • For a healthier version, bake the chicken Kiev in the oven instead of frying.
