Cherry Almond Biscotti is a delightful treat that combines the richness of almonds with the sweet burst of dried cherries. Crispy, flavorful, and perfect with a cup of coffee or tea, this homemade biscotti is always a crowd-pleaser and a lasting snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup dried cherries, roughly chopped
  • 1 cup sliced almonds (or whole almonds)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add Eggs and Extracts: Add eggs one at a time, beating well after each addition. Mix in the vanilla and almond extracts.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in Cherries and Almonds: Gently fold in chopped dried cherries and sliced almonds.
  7. Shape the Dough: Shape the dough into a log, about 12 inches long and 3 inches wide, on the prepared baking sheet.
  8. Bake First Round: Bake for 25-30 minutes, until golden brown and firm.
  9. Slice and Bake Again: After cooling for 10 minutes, slice the log into 1/2-inch thick pieces and bake again for 15-20 minutes, flipping halfway through.
  10. Cool and Serve: Let biscotti cool completely on a wire rack before serving.

Notes

  • Crispier Biscotti: For extra crunch, bake longer in the second round, but avoid burning.
  • Flavor Boost: Add orange or lemon zest for a refreshing twist.
  • Storage: Biscotti keeps well for up to 2 weeks in an airtight container or up to 3 months in the freezer.
