Cheesy Garlic Zucchini Steaks are a delightful and healthy alternative to traditional meat steaks, offering a flavorful combination of tender zucchini, aromatic garlic, and melted cheese. This dish is perfect as a side or a light main course.

Ingredients

  • 2 large zucchinis
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, torn, for garnish
  • Crushed red pepper flakes, for garnish (optional)

Instructions

  1. Prepare the Zucchini:

    • Slice each zucchini lengthwise into 1/2-inch thick “steaks.”
    • Using a sharp knife, score the flesh side of each steak in a crisscross pattern.
    • Sprinkle both sides with salt and let them sit for about 15 minutes to draw out excess moisture.
    • After 15 minutes, pat the zucchini steaks dry with a paper towel to remove the released moisture.
  2. Sear the Zucchini:

    • Preheat your oven to 425°F (220°C).
    • In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat.
    • Place the zucchini steaks flesh-side down in the skillet and sear for about 3 minutes until golden brown.
    • Flip the zucchini steaks and remove the skillet from heat.
  3. Prepare the Garlic Mixture:

    • In a small bowl, combine the remaining 1 tablespoon of olive oil with the minced garlic, dried oregano, dried basil, and freshly ground black pepper.
  4. Assemble and Bake:

    • Brush the garlic mixture evenly over the flesh side of each zucchini steak.
    • Sprinkle the shredded mozzarella and grated Parmesan cheeses over the top.
    • Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  5. Garnish and Serve:

    • Remove from the oven and garnish with torn fresh basil leaves and a sprinkle of crushed red pepper flakes, if desired.
    • Serve immediately and enjoy!

Notes

  • For added flavor, you can sprinkle some red pepper flakes on top before baking.
  • Using a mix of different cheeses, such as feta or cheddar, can provide a richer taste.
