Ingredients

  • 1 cup finely chopped mixed vegetables (carrots, bell peppers, spinach, etc.)
  • 1 cup grated cheese (mozzarella, cheddar, or a mix)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili flakes (optional)
  • 810 spring roll wrappers or thin pastry sheets
  • 1 egg (for egg wash) or 2 tablespoons melted butter
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Sauté the Vegetables: Heat olive oil in a pan over medium heat. Add the chopped vegetables, garlic, Italian seasoning, salt, black pepper, and chili flakes (if using). Sauté for 3-4 minutes until the vegetables are slightly softened. Remove from heat and let cool.
  2. Mix in the Cheese: Once the vegetables have cooled, stir in the shredded cheese.
  3. Assemble the Rolls: Lay out a spring roll wrapper and spoon a portion of the veggie-cheese mixture onto one end. Roll tightly, tucking in the sides as you go. Seal the edges with a little water or egg wash.
  4. Brush and Bake: Place the rolls on a parchment-lined baking sheet, seam side down. Lightly brush with melted butter or egg wash. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden and crisp.
  5. Serve: Let the rolls cool slightly before serving. Enjoy with your favorite dipping sauce!
