  • 3 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cubed
  • 16 ounces andouille sausage, sliced

Vegetables and Spices:

  • 1 medium white onion, diced
  • 4 medium celery ribs, sliced
  • 1 medium green bell pepper, diced
  • 1 medium jalapeno, minced
  • 4 cloves minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper

Additional Ingredients:

  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 (15 ounce cans) great northern beans, drained
  • 1/2 pound raw shrimp, peeled, deveined, tails removed
  • 1/2 cup heavy cream

Instructions

  1. Prepare Ingredients: Heat olive oil in a large pot over medium heat. Add chicken and sausage, cooking until browned. Remove from pot and set aside.
  2. Sauté Vegetables: In the same pot, cook onion, celery, bell pepper, jalapeno, and garlic until softened.
  3. Add Spices: Stir in cumin, paprika, chili powder, and cayenne pepper. Cook for 1 minute.
  4. Thicken: Sprinkle flour over the vegetables and stir to coat. Cook for 2 minutes.
  5. Cook Chili: Pour in chicken broth, beans, shrimp, and cooked chicken and sausage. Simmer for 20 minutes.
  6. Finish: Stir in heavy cream and cook for an additional 5 minutes. Serve hot.
