1/2cup coconut milk or cream of coconut
1/2cup bubblegum-flavored syrup
1cup ice
1/2cup white rum (optional for an alcoholic version)
1/4 teaspoon vanilla extract
Whipped cream (for topping)
Maraschino cherries (for garnish)
Pink sugar or shredded coconut (for rimming the glass)
Instructions
Prepare the Glass: If desired, rim the glass with pink sugar or shredded coconut. Simply dip the rim in pineapple juice and then into the sugar/coconut.
Blend the Drink: In a blender, combine pineapple juice, coconut milk, bubblegum syrup, ice, vanilla extract, and rum (if using). Blend until smooth and creamy.
Serve: Pour into a chilled glass.
Garnish: Top with whipped cream and a maraschino cherry for a fun and colorful finish.
Enjoy: Serve immediately with a straw and sip away!
Notes
For a non-alcoholic version, simply omit the rum.
Add a few drops of pink food coloring if you want a more vibrant hue.
To make it extra creamy, use frozen pineapple instead of ice.
