  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups crushed tomatoes
  • 1 cup diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Brown the Beef: In a large pot, brown the ground beef with chopped onions and minced garlic. Drain excess fat once the beef is fully cooked.
  2. Add the Spices: Stir in chili powder, cumin, paprika, salt, and pepper. Let the spices toast for 1-2 minutes.
  3. Simmer the Chili: Add kidney beans, crushed tomatoes, diced tomatoes, and beef broth. Stir well and bring to a simmer. Let it cook for 30-40 minutes, stirring occasionally.
  4. Adjust Seasoning: Taste and adjust the seasoning as needed. Add more chili powder or salt if desired.
  5. Serve and Enjoy: Ladle the chili into bowls and top with sour cream, shredded cheese, and fresh cilantro.

Notes

  • Don’t rush the simmering process—let the chili cook long enough for all the flavors to meld.
  • For a spicier version, add diced jalapeños or a dash of hot sauce.
  • Use quality beef for the best flavor. Lean ground beef (80/20) is ideal.
