1 lb ground beef
1 can (15 oz) kidney beans, drained and rinsed
2 cups crushed tomatoes
1 cup diced tomatoes
1 medium onion, chopped
3 cloves garlic, minced
3 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
4 cups beef broth
Salt and pepper to taste
Instructions
Brown the Beef: In a large pot, brown the ground beef with chopped onions and minced garlic. Drain excess fat once the beef is fully cooked.
Add the Spices: Stir in chili powder, cumin, paprika, salt, and pepper. Let the spices toast for 1-2 minutes.
Simmer the Chili: Add kidney beans, crushed tomatoes, diced tomatoes, and beef broth. Stir well and bring to a simmer. Let it cook for 30-40 minutes, stirring occasionally.
Adjust Seasoning: Taste and adjust the seasoning as needed. Add more chili powder or salt if desired.
Serve and Enjoy: Ladle the chili into bowls and top with sour cream, shredded cheese, and fresh cilantro.
Notes
Don’t rush the simmering process—let the chili cook long enough for all the flavors to meld.
For a spicier version, add diced jalapeños or a dash of hot sauce.
Use quality beef for the best flavor. Lean ground beef (80/20) is ideal.
