  • 1 tbsp chipotle chili powder
  • 1 tbsp cumin
  • 2 tbsp chili powder
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup beef broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the ground beef and season with salt and pepper. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
  2. Sauté the Vegetables: Add chopped onion, garlic, and bell pepper. Cook for 5 minutes until vegetables are softened.
  3. Add the Spices: Stir in cumin, chipotle chili powder, and regular chili powder. Cook for 1-2 minutes to toast the spices.
  4. Add the Beans and Tomatoes: Stir in black beans and diced tomatoes with juice. Mix well.
  5. Add the Broth: Pour in beef broth and bring the chili to a simmer. Reduce heat and let cook for 30-40 minutes, stirring occasionally.
  6. Adjust Seasoning: Taste and adjust salt, pepper, and spices as needed.
  7. Serve: Serve hot with optional toppings like sour cream, shredded cheese, or fresh cilantro.
