Ingredients
Scale
1 lb ground beef
2 cups black beans (cooked or 1 can)
1 medium onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
1 tbsp chipotle chili powder
1 tbsp cumin
2 tbsp chili powder
1 can (14.5 oz) diced tomatoes (with juice)
1 cup beef broth
1 tbsp olive oil
Salt and pepper to taste
Instructions
Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the ground beef and season with salt and pepper. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
Sauté the Vegetables: Add chopped onion, garlic, and bell pepper. Cook for 5 minutes until vegetables are softened.
Add the Spices: Stir in cumin, chipotle chili powder, and regular chili powder. Cook for 1-2 minutes to toast the spices.
Add the Beans and Tomatoes: Stir in black beans and diced tomatoes with juice. Mix well.
Add the Broth: Pour in beef broth and bring the chili to a simmer. Reduce heat and let cook for 30-40 minutes, stirring occasionally.
Adjust Seasoning: Taste and adjust salt, pepper, and spices as needed.
Serve: Serve hot with optional toppings like sour cream, shredded cheese, or fresh cilantro.
Notes
Use lean beef for a healthier version, or substitute ground turkey for a lighter option.
Let the chili simmer longer for deeper flavor development.
