For the Sausage Gravy:

  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper

Instructions

Step 1: Make the Biscuits

  1. Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined. Do not overmix.
  5. Roll out the dough on a floured surface to about 1-inch thickness. Cut into rounds using a biscuit cutter.
  6. Place biscuits on the prepared baking sheet and bake for 12-15 minutes, until golden brown.

Step 2: Brown the Sausage

  1. While biscuits bake, heat a large skillet over medium heat.
  2. Add the breakfast sausage and cook until browned, breaking it up with a spoon.

Step 3: Make the Gravy

  1. Sprinkle the flour over the cooked sausage and stir to coat.
  2. Slowly pour in the milk, stirring constantly to avoid lumps.
  3. Cook for 5-7 minutes, stirring frequently, until the gravy thickens.
  4. Season with salt and black pepper to taste.

Step 4: Serve and Enjoy

  1. Split the biscuits and spoon the hot sausage gravy over the top.
