This banana bread is rich, moist, and packed with real banana flavor. It comes together in one bowl—no mixer needed—and it’s the kind of recipe you’ll make once and never forget.

Ingredients

Scale
  • 3 very ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • ½ to ¾ cup sugar (white, brown, or a mix)
  • 2 large eggs
  • ½ cup melted butter (or neutral oil)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Optional: ½ cup chopped nuts or chocolate chips
  • Optional: Raw sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan.
  2. In a large mixing bowl, mash the bananas until mostly smooth.
  3. Add melted butter, eggs, sugar, and vanilla to the bananas. Stir until well combined.
  4. Sprinkle flour, baking soda, and salt over the mixture. Stir just until no dry spots remain—don’t overmix.
  5. Fold in nuts or chocolate chips if using.
  6. Pour the batter into the prepared loaf pan. Smooth the top and sprinkle with raw sugar, if desired.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10–15 minutes, then remove and let cool fully on a rack.
  9. Slice and enjoy warm or at room temperature.

Notes

  • Use bananas that are heavily speckled or black for the best flavor.
  • Don’t overmix the batter—this can make the bread dense.
  • Add a swirl of peanut butter or Nutella for a fun twist.
  • To make muffins, reduce bake time to 18–22 minutes.
  • For dairy-free, use oil and non-dairy milk (if needed).
