These Beef Burritos are filled with seasoned ground beef, black beans, rice, and cheese, then wrapped in a flour tortilla and topped with salsa, sour cream, avocado, and cilantro. A delicious and satisfying meal for any day of the week!

For the Beef Filling:

  • 1 pound ground beef
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 ounce taco seasoning (1 packet or homemade seasoning)
  • ½ cup water
  • 15 ounces black beans (drained and rinsed)
  • 1 cup cooked rice
  • 1 cup cheddar (shredded, or Monterey Jack cheese)

For the Burritos:

  • 4 large flour tortillas
  • 1 cup salsa (or pico de gallo)
  • 1 cup sour cream
  • 1 avocado (sliced)
  • fresh cilantro (chopped (for garnish))
  • lime wedges (for serving)

Instructions

  1. Cook Ground Beef: In a skillet, cook ground beef, onion, and garlic until beef is browned. Add taco seasoning, water, black beans, and cooked rice. Stir to combine.
  2. Assemble Burritos: Place a portion of the beef filling onto a flour tortilla. Top with cheese, salsa, sour cream, avocado, and cilantro.
  3. Roll Burritos: Fold in the sides of the tortilla, then roll up tightly to enclose the filling.
  4. Serve: Cut burritos in half, garnish with cilantro and serve with lime wedges.

Notes

  • You can customize these burritos by adding your favorite toppings like jalapenos, diced tomatoes, or hot sauce.
  • To make the burritos ahead of time, assemble them and wrap tightly in foil. Reheat in the oven when ready to serve.
