These BBQ Pineapple Chicken Kabobs are a perfect blend of sweet and savory flavors with juicy chicken, fresh pineapple, and colorful vegetables grilled to perfection.

Main Ingredients:

  • ⅔ cup barbecue sauce
  • ⅔ cup teriyaki sauce
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch chunks

Additional Ingredients:

  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1 1/2-inch pieces
  • 1 sweet onion, cut into 1 1/2-inch pieces
  • 2 tablespoons canola oil
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Marinate the chicken: In a bowl, combine barbecue sauce, teriyaki sauce, garlic, and ginger. Add chicken chunks, cover, and refrigerate for at least 1 hour.
  2. Prepare the skewers: Preheat grill to medium-high heat. Thread marinated chicken, pineapple, bell pepper, and onion onto skewers.
  3. Grill the kabobs: Brush with canola oil and season with salt and pepper. Grill for 10-15 minutes, turning occasionally, until chicken is cooked through.

Notes

  • Soak wooden skewers in water for 30 minutes before threading to prevent burning.
  • You can also broil the kabobs in the oven if grilling is not an option.
