⅔ cup barbecue sauce
⅔ cup teriyaki sauce
3 cloves garlic, minced
1 tablespoon freshly grated ginger
2 pounds boneless skinless chicken breasts, cut into 1-inch chunks
Additional Ingredients:
2 cups fresh pineapple chunks
1 red bell pepper, cut into 1 1/2-inch pieces
1 sweet onion, cut into 1 1/2-inch pieces
2 tablespoons canola oil
Kosher salt and freshly ground black pepper, to taste
Instructions
Marinate the chicken: In a bowl, combine barbecue sauce, teriyaki sauce, garlic, and ginger. Add chicken chunks, cover, and refrigerate for at least 1 hour.
Prepare the skewers: Preheat grill to medium-high heat. Thread marinated chicken, pineapple, bell pepper, and onion onto skewers.
Grill the kabobs: Brush with canola oil and season with salt and pepper. Grill for 10-15 minutes, turning occasionally, until chicken is cooked through.
Notes
Soak wooden skewers in water for 30 minutes before threading to prevent burning.
You can also broil the kabobs in the oven if grilling is not an option.
